I. Five Dimensions of Flavor
**Sweet**
- Sources: Syrups, liqueurs, juices, fruits
- Role: Provides roundness, balances acidity and bitterness
- Note: Too sweet masks other flavors
**Sour/Acid**
- Sources: Citrus juice, vinegar, sour liqueurs
- Role: Provides brightness and freshness, stimulates salivation
- Note: Too sour makes the drink unpalatable
**Bitter**
- Sources: Bitters, Campari, absinthe, herbs
- Role: Adds complexity and depth, balances sweetness
- Note: Bitterness is most easily over-added
**Strong/Alcohol**
- Sources: The base spirit itself
- Role: Provides warmth and body
- Note: Alcohol burn needs sweet-sour balance
**Aroma**
- Sources: Garnish, essential oils, herbs, spices
- Role: Creates anticipation before drinking
- Note: Aroma is "invisible flavor," affecting up to 80% of flavor perception
II. The Art of Balance
**Golden Ratios**
- Sour-style cocktails: 2 parts spirit : 1 part sour : 0.75 parts sweet
- Bitter-style cocktails: 1:1:1 (like Negroni)
- Spirit-forward cocktails: Adjust spirit-to-vermouth ratio to taste
**Balance Correction**
- Too sour → add a little syrup
- Too sweet → add a little lemon juice
- Too bitter → add a little syrup or dilute
- Too strong → add a little sour or sweet to balance
- Too weak → reduce stirring/shaking time (less dilution)
III. Creative Recipe Development Process
**Step 1: Determine Direction**
- What base spirit?
- What season/occasion?
- Refreshing or rich?
**Step 2: Choose Structure**
- Sour structure? Highball structure? Martini structure?
**Step 3: Flavor Pairing**
Reference the Flavor Wheel:
- Complementary pairing: Citrus + herbs (gin + basil)
- Contrasting pairing: Smoky + sweet (mezcal + honey)
- Bridging pairing: Use one ingredient to connect two seemingly mismatched flavors
**Step 4: Test and Adjust**
- Make small test batches first (15ml spirit version)
- Record every adjustment
- Get feedback from others
**Step 5: Name and Present**
- Give it a meaningful name
- Choose appropriate glassware and garnish
