Fat Washing & Infusion Techniques
Fat washing and infusion are two core techniques professional bartenders use to explore flavor boundaries. They create unique flavors you can't buy in stores.
I. Fat Washing
**Principle**: Flavor compounds in fats (butter, coconut oil, olive oil, bacon fat etc.) are fat-soluble. Mix fat with spirits, flavors transfer from fat to alcohol, then freeze to separate solid fat.
**Classic Examples**:
- Brown Butter Whiskey: Warm, creamy, toffee-like
- Coconut Oil Rum: Tropical, silky, coconut aroma
- Bacon Bourbon: Smoky, savory, complex
- Olive Oil Gin: Herbal, fruity, Mediterranean
**Standard Steps**:
- Melt fat to liquid (if solid)
- Mix fat with spirit at 1:4 to 1:8 ratio
- Seal container, rest at room temperature 4-24 hours (longer = more flavor)
- Shake every few hours
- Freeze for at least 12 hours (fat solidifies on surface)
- Scoop off the solidified fat layer
- Filter remaining particles through coffee filters
- Bottle and store
**Notes**:
- Use unsalted butter (avoid saltiness)
- Bacon needs to be cooked crisp before using the fat
- Fat-washed spirits have shorter shelf life (2-4 weeks refrigerated)
- Start with small batches to test ratios
II. Infusion
**Principle**: Steep flavor materials in spirits, letting alcohol extract flavor compounds. Alcohol is an excellent solvent, extracting flavors water cannot.
**Infusion Material Categories**:
*Fruits*
- Berries (strawberry, blueberry, raspberry): 24-48 hours
- Citrus peel (orange, lemon, grapefruit): 24-72 hours
- Tropical fruits (pineapple, mango, passion fruit): 24-48 hours
*Herbs & Spices*
- Mint, basil, rosemary: 4-12 hours (too long becomes bitter)
- Vanilla bean: 1-2 weeks
- Cinnamon sticks, cloves, star anise: 3-7 days
- Coffee beans: 24-48 hours
- Chili peppers: 2-12 hours (adjust by heat level)
*Nuts & Seeds*
- Almonds, walnuts: 1-2 weeks
- Cocoa beans: 1-2 weeks
- Sesame seeds: 3-5 days
**Standard Steps**:
- Prepare materials: wash, chop, toast (if needed)
- Place in sealed glass jar
- Pour in spirit, fully covering materials
- Seal, store in cool dark place
- Shake daily
- Taste regularly, filter when ideal flavor is reached
- Filter through coffee filters or fine cheesecloth
- Bottle and store
**Quick Infusion (Sous Vide)**:
Using a sous vide cooker dramatically reduces infusion time:
- Temperature: 50-60°C
- Time: 2-4 hours (equivalent to 1-2 weeks traditional method)
- Vacuum seal materials then place in water bath
III. Advanced Applications
**Double Infusion**: Infuse one material first, filter, then infuse another for complex layers
**Comparative Infusion**: Same material infused in different base spirits to compare flavor differences
**Infusion Blending**: Mix multiple infused liquids in ratios to create unique recipes
